Baking Day
I had mixed up some bread dough and left it covered on the countertop and forgot all about it all day. I went to bed and awoke with a start, remembering that I never did anything with that dough. So I got outta bed and put it in the refrigerator. The next day I brought it out and it looked good, and I thought about making coffee cake. The picture above is ground almond butter, spooned on in dollops and chopped preserved figs which I just happened to have on hand. I rolled up the filling and placed the loaf to rise on parchment paper.
Before baking I brushed an egg wash on the loaf and shaved some fresh orange rind over it.
Then after it was baked (450 degree for 30 minutes) I made a glaze from the orange juice and confectioner's sugar. It smelled heavenly and took forever to cool down enough to slice. The texture was very soft and springy and the filling was just sweet enough, and yet not too sweet. The orange glaze was just the right touch. I think I'll have another slice now.

ReplyDeleteIt looks wonderful! My grandmother used to bake every Saturday and each week we would bring home 2-3 large brown grocery bags of bread, pan rolls, cinnamon rolls, apple kuchen, and caramel rolls. I made sure my sons know how to make bread - but their main purpose is for pizza crust. I may pull out my yeast for some baking tomorrow since I have no time today.

ReplyDeleteEver since I was diagnosed with Celiac disease last August, I have been craving just one piece of good bread. Forget the gluten-free stuff - it's NASTY! Your pictures are so awesome, I can almost smell the bread through the internet.
