How about some coffeecake?

We are falling over my daily loaves of bread around here, in the freezer, on the counter, in the fridge... so I thought about using the sourdough bread dough for something else a little more tempting.
Pat out the dough, melt some butter, paint it on.
Add cinnamon sugar, chopped walnuts and pecans.
Plump up some dried cherries and raisins in water in the microwave and dump out the liquid.
Add them to the dough, and roll.
Bake at 450 until golden brown.
Wait as long as you can to cut into it.
Slather with butter and enjoy.
OK the recipe: 3 cups of flour, 12 oz. water, 1 tsp salt. 1/4 teaspoon yeast. No kneading. Just let it rise overnight, covered, in a big bowl. 3 cups rises to 8 overnight. Punch it down, cover and let rise again for about an hour. Then dust with flour and pat out. The rest is pictured above.

Gotta try this. Do you let it rise for an hour before baking?

Roll out the dough. Put butter on it, then place a mixture of ground walnuts and brown sugar on the dough. You can put a little canned milk on it to make it a wet mixture. Roll it up like a jelly roll, let it rise, brush with egg and bake....Polish nutroll. It is wonderful with coffee in the morning.

Mel, I live in a small town like you and there are NO good bakeries. It sounds like you are making more than the 2 of you can eat. I bet you could sell those.
Could be your next career move!

  17. O Laura, no hinting at making my follies into a job. This is just a phase I am going through. And everyday I try to remain in the retired state of mind. Not that easy for a person who is always seeing the possibilities of profitmaking. eek!
