Terry's Pancakes

In an effort to condense and declutter, and find what I need when I need it, I have been going through my storage and tossing out ( I am the Great Purger) and finding better homes for the things I actually use. I managed to empty this entire armoire, and the three sets of wire drawers contained within. There was a fourth set in the toolshed, and I asked my sister Brooke if she could use these. Yes!
So I packed them up and drove over for my weekly visit. Since she moved to her new house, I have found myself visiting on a semi-regular basis.

When I arrived, my B-I-L Terry answered the door. He had been making pancakes, a treat for most people but not something I enjoy. I was informed that these were different. They didn't need syrup as they were sweet already. Cornbread pancakes, um, HONEY cornbread pancakes, doctored up by Terry, who loves to bake. Sigh. OK. I agreed to try one little one.



 I had to admit, these were sensational. What's the recipe I asked?
It all starts with this mix.















The package calls for 1.5 cups of water, and that's it. But not for Terry. He did this recipe:


I pkg. Marie Callender's Honey Butter Cornbread mix
1 egg
1/4th cup small curd cottage cheese
Mix these with enough Vanilla Almond milk to make a total 1.5 cups of wet ingredients.

Stir and fry in a modicum of veg oil. No butter or syrup is needed. This makes a lot of pancakes!
I was going grocery shopping on my way home and bought all these ingredients. These are not cheapo pancakes, but I knew Dave would love them. He did, and of course for him, butter and syrup were necessary.

  2. Is this not a case of "And lead us not into temptation" ?? They sound delicious. Why the almond milk rather than milk/cream/

    1. Terry has a lactose intolerance, so he prefers almond milk. It also happens to be delicious with chai tea brewed in it.
