Remember the Jello Poke Cake?
I needed a special dessert for when my friend Rose was here, so I decided to resurrect the Jello Poke Cake, especially since there are so many new flavor combinations to try.
My choice was a Chocolate Fudge box cake mix, and poked in raspberry jello. For the frosting (imho the BEST PART) I used Cheesecake instant pudding and Cool Whip, mixed together and spread in a thick layer over the cooled jelled cake. Scrumptious.
But wait! There are tons of other jello flavors, and pudding flavors to make sensational combos.
Imagine for the fall, pumpkin cake with orange jello and pumpkin spice/Cool Whip frosting
Or for Cinco de Mayo Lemon cake with margarita jello and coconut/Cool Whip frosting.
The plain ol' recipe is here and to make the frosting, just mix the instant pudding as directed on the box and fold into 8 oz of Cool Whip. Spread on cooled cake.

ReplyDeleteSpeaking of jello, here is something I discovered recently: mix one small box of sugar free butterscotch jello pudding with a can (15-16 oz) crushed pineapple. Add 1 carton fat free Cool Whip and 2-3 chopped apples (skin, too). It’s called a Caramel Apple Salad, and it is to die for.
ReplyDeleteI also like to take an angel food cake mix (dry) and mix it with one can of (lite or regular) blueberry or cherry pie filling. Bake at 350 for a half hour in a 9x13 pan. Easy. Out of this world!!

Thanks Melody, for the reminder! I didn't even THINK of how great it would be to mix the pudding with cool whip! Deliciouso! Kudos.
ReplyDeleteI used to make those cakes all the time when my kids were young. Now I am hungry and want cake. Jello cake that is!
ReplyDeleteI love poke cake, and I tried a variation the other day that I love just as much. Open a 20-oz. can of pineapple in juice or water, and pour off the liquid (reserve it). After you make the cake and poke the holes, spread the pineapple over the cake. Mix a small box of instant vanilla pudding with the reserved pineapple juice, then fold in cool whip (up to a tub; I probably used 3/4 of a tub). Spread that over the top. Yummy!

My Mom used to make a lime green jello one with the pudding and coolwhip mixture for the icing, and I love it and have been trying to find someone local to make it for me, with no luck.. I have been talking about this for years now. I was so glad to read your post.

All of the above. Yummmm. Carrot cake mix with the cheesecake pudding mixed with Cool Whip. The drizzle could be orange juice. Yeah, I'm all over it!
